Nourishing Flavors

Fujianese Style Peanut Zoodles

A high protein, zoodle version of Ewa and and Jeromy Ko of Nom Life's Fujianese Peanut Noodles.  

INGREDIENTS
2 tablespoons PB2 Peanut Butter Powder (mixed with a little bit of water until smooth) 
1 scoop Orgain Simple Peanut Butter Organic Plant Protein Powder
2 teaspoons Braggs Amino Acids 
1 1/ 2 teaspoons fish sauce
1 1/ 2 teaspoons sesame oil
2 (4 ounce) servings of wonton noodles or you noodles of choice, or 1 zucchini, zoodled 

DIRECTIONS
  1. If making noodles, bring a large pot of water to boil. Add noodles and cook according to package instructions.
  2. In a large bowl, whisk together PB2 with water, plus one scoop protein powder
  3. Once creamy, stir in soy sauce, fish sauce and sesame oil. Set aside.
  4. On low heat, add one teaspoon sesame oil and add any vegetables you like. I used diced garlic, white onion, asparagus, red pepper, eggplant mushrooms and carrot. Simmer on low heat until veggies soften. 
  5. Once the noodles are cooked through, reserve 1/2 cup of the starchy water
  6. Add noodles or zoodles to combine with veggies, stir together for a few minutes
  7. Add peanut sauce to noodle/zoodle/veggie mix (use the starchy water from the noodles to adjust the consistency) and allow to simmer together for a few minutes.
  8. Garnish with scallions, sesame seeds or chili oil.
