Homemade Tzatziki and Pita

An ode to dill.  So refreshing.  This tzatziki pairs well with lemony greek chicken and potatoes, or as a simple snack with homemade pita.  
Simple ingredients, ready in no time.  

INGREDIENTS
1/2 of a large cucumber, unpeeled
1 1/2 cups plain full-fat Greek yogurt
3 large garlic cloves, finely minced
2 tablespoons extra virgin olive oil
1 tablespoon white vinegar
1/2 teaspoon salt
2 tablespoon minced fresh dill

DIRECTIONS 
  1. Grate the cucumber and drain through a fine mesh sieve or cheesecloth overnight in the fridge. You can also place the grated cucumber on a paper towel, and roll up and squeeze excess moisture out if you're in a rush. 
  2. Combine the yogurt, garlic, oil, vinegar, and salt in a large bowl. Cover and refrigerate for 30 minutes for flavors to settle
  3. Transfer the grated cucumber and fresh dill to the yogurt mixture and stir to combine. Serve chilled with homemade pita bread for dipping.

Homemade Pita Bread 
Take any brand of pita bread and slice into mini triangles for baking.   Heat oven to 400 degrees.  If you're making my lemony greek potatoes, remember that reserved "dressing"?  Spread pita triangles on baking sheet and drizzle some dressing over pita before placing in oven and let bake for 20 minutes.
