Adapted from my beloved chicken, feta and spinach burger from Agata & Valentina on the Upper East Side, and served over zoodles and spinach. I'm obsessed with Agata's Chicken, Feta & Spinach burger and was determined to find a way to create a recipe on my own. This was my first stab at it, and while it's not exactly a match (at least it's cheaper than $10/burger!), it's a delicious work in progress. Recipe below.
INGREDIENTS: 1 1/2 cups baby spinach 2 cups feta cheese 1 1/2 pounds ground chicken 1/2 red onion, diced 1/4 cup panko 1 large egg, slightly beaten 3 garlic cloves 2 tablespoons lemon juice 1 teaspoon salt 1 teaspoon cumin 1 teaspoon ground black pepper 1 zucchini, zoodled Served with: Pesto Tzatziki DIRECTIONS:
*Freeze remaining burgers
