Turkey, Feta & Spinach Burgers

Adapted from my beloved chicken, feta and spinach burger from Agata & Valentina on the Upper East Side, and served over zoodles and spinach. 
I'm obsessed with Agata's Chicken, Feta & Spinach burger and was determined to find a way to create a recipe on my own.  This was my first stab at it, and while it's not exactly a match (at least it's cheaper than $10/burger!), it's a delicious work in progress.  Recipe below. 

INGREDIENTS: 
1 1/2 cups baby spinach
2 cups feta cheese
1 1/2 pounds ground chicken
1/2 red onion, diced  
1/4 cup panko
1 large egg, slightly beaten
3 garlic cloves 
2 tablespoons lemon juice
1 teaspoon salt
1 teaspoon cumin 
1 teaspoon ground black pepper
1 zucchini, zoodled

Served with:  Pesto Tzatziki 



DIRECTIONS:  
  1. Dice red onion and simmer on low for about 5-7 minutes until slightly translucent, set aside
  2. Combine garlic, spinach with feta cheese in a food processor; pulse until mixed, about one minute.
  3. Transfer spinach and feta mixture to a bowl; add chicken, onions, panko, egg, lemon juice, cumin, salt, pepper; mix until just combined. Shape mixture into six patties.
  4. Heat another skilled on low heat and spray with Avocado Oil cooking spray (Chosen Foods is my go-to) add add zoodled zucchini and a handful of spinach, cook on low heat until soft 
  5. Heat large skillet over medium heat and spray with Avocado Oil cooking spray and cook patties on both sides for 3 to 4 minutes on each side until golden brown and juice runs clear.
  6. Serve burger on top of zoodles and spinach, add desired Pesto Tzatziki, crumbled feta, olives, salt and pepper and enjoy 

*Freeze remaining burgers
